This recipe was reverse engineered from me vibing it out and is therefore extremely approximate. Please read the footnotes.

Ingredients

  • 2 loaves of Mother's Pride white bread, crusts removed and blitzed (980g breadcrumbs)
  • 90g fresh parsley, de-stemmed and finely chopped 1
  • 3 large onions, finely chopped (about 200g each) 2
  • 250g unsalted butter, at room temperature 3

Method

  1. Remove the crusts from the bread and blitz it into crumbs.
  2. De-stem the parsley and chop it finely.
  3. Finely chop the onions.
  4. Mix the breadcrumbs, parsley and onion together, then work in the butter until everything is evenly coated.
  5. Press into a loaf tin. This quantity completely fills a large loaf tin.
  6. Bake in the oven at 180°C until the top goes crispy.

Buy more than you think. A packet is about 30g so you need three or four packets.

This isn't close to enough onion. Next time double or triple it.

250g is probably a touch too much. Around 200g is likely better.
